Apple pie

Autumn is here! At Zvezda, we have adapted to it by adding new ingredients and flavours to our desserts. Since apples are in season, we started making apple pie with a sesame-seed crust. Our pastry cooks prepare the apple filling for this mouth-watering dessert in two different ways: while grating and caramelising half of the apples (this takes about three hours), they prepare the second half of the apples by cutting them in cubes and slowly steaming them until soft. This process takes a long time as well as great patience, but it is worth the effort when the air fills with the enticing smell of apples.
