Blondie cake

Responding to our invitation, the great confectioner Christophe Domange, Valrhona’s confectionery chef, visited Ljubljana for a couple of days. He taught us new confectionery techniques and presented Valrhona’s newest chocolate, which is officially classified as white chocolate but is light brown and has a sweeter taste resembling caramel. Using this new chocolate and with the help of our guest we designed a new cake called Blondie. This richly adorned new cake is prepared with sablé and almond sponge cake, mango and passion fruit caramel, caramel-chocolate ganache, and mango, passion-fruit and coconut jellos.
